Continuing on with our healthy recipe month, we have a new recipe for you this week! Robyn Anne Rose from Vitamins and Sprouts is getting into the warmer weather, and is getting keen about superfoods and how to include them in your everyday diet.
Of course, no real healthy recipe would be complete without a sprinkle or two of Rose-Hip Vital. Read all about her healthy Pineapple, Camu and Coconut Nice Cream recipe below!
Superfoods are all the rage now and rightly so. But have you ever thought about what makes certain foods super? Although there is at present no definitive term it is generally accepted by health professionals that superfoods are those foods that have benefits that go beyond their level of nutrients.
This means that they need to provide extra health benefits such as being anti-inflammatory, anti-aging, or offer our bodies extra disease protection. Im excited because todays Nice Cream recipe that I am sharing with you, is a superfood powerhouse. Ingredients such as turmeric, pineapple and rosehips all possess high amounts of anti-inflammatory agents while pineapple, Camu Camu, and rosehips are extremely high in vitamin C and antioxidants.
Rose-Hip Vital with GOPO even contains 50% more vitamin C than oranges making it an excellent immune system booster too. This nice cream is a fun and delicious way to increase your intake of these exceptional foods, and is so filling that you are going to need someone to share the love with.
Pineapple, Camu & Coconut Nice Cream
Serves 2
INGREDIENTS
- a fresh pineapple, cut lengthwise. (Scoop out flesh, dice and freeze overnight. Also freeze the pineapple she'll overnight as this will become the serving boat)
- 2 bananas (cut in thirds and frozen overnight)
- 270 ml can coconut cream (refrigerated overnight)
- 2 teaspoons Camu Camu powder
- 2 scoops Rose-Hip Vital with GOPO powder
- 2 teaspoons of turmeric latte blend powder (this powder should have turmeric, ginger, black pepper and possibly some other spices)
- cup maple syrup (adjust to taste)
- Nut milk of choice to liquefy ingredients
METHOD
Place all ingredients, except nut milk, in a blender. Turn machine on and slowly add just enough nut milk so that ingredients will blend together smoothly. Pour mixture into ice cream maker and follow instructions as per manual. If making nice cream by hand, pour mix into a cold bowl and place in freezer. Pull nice cream out every 30 minutes and stir vigorously and return. Repeat until frozen. Serve in frozen pineapple boat. Decorate with kiwi fruit stars and mint leaves.
